Here's a new design for me. This one is thin 15N20 from JT. First time that I ground a blade post heat treat, and I really liked doing it that way.

Thanks guys! The blue on the sheath is actually acrylic paint. I thinned it and let it soak in and built it up in layers. It's finished with acrylic resolene and paste wax.

Custom layups from nova-insulation.com the catch is the 3 sheet minimum order per color or thickness. Great quality. Don't let the country of origin fool you.

Here are two knives, a 150mm petty and a 240mm gyuto, that I recently sent out to Chef John for some testing and feedback. They are made of 52100 and I have heat treated them in house to 62 HRC. I hope to begin selling my knives soon.

Those are gorgeous. How did you do the crosshatch? Scotchbrite?

I did it by hand...think it was 800 grit. I am undecided on which I like better, the cross hatch or just straight pulls lengthwise...I do think the cross hatch is neat looking though.
