Trying out my hand at my version of an S-grind, since they're so popular right now. I severely overestimated my freehand grinding ability haha! I should have used a jig until I was more comfortable with this type of grind. NBD though, since it's for my own kitchen experimenting anyway.

Here’s what I’m working on today
got some cocobolo snakewood and African blackwood glued up for the handle
finished up with 220 grit hand sanding on blade now ready to go to 400 grit. (The steel is S35VN so it take’s more time to hand sand)

First time working with non-mono steel.
33 layers of stainless with a VG10 core.
The lines actualy help see where you're removing steel on the grinder.
Not cheap but an enjoyable steel to work with.
It's going to be a 3-finger knife.

I use it very frequently and as you say its great because the steel tells you how to keep the grind symmetrical on both sides. If someone comes with a way to make 3 layer sanmai in an economical way it would be the ultimate steel for learning the trade...

Here's my latest basically ready to sharpen. 8670 Trailing Point Bowie with "phenolic resin" from AAO Customs, Osage Orange and Elk with G10 liners. Guard and pommel are blued steel. Slotted dowel construction to get rid of the soft pith. Brass thru pin and 3 more securing the pommel. It's about 11 3/4 OAL
