What's that you're eating?

Smoking a brisket for Thanksgiving tomorrow. I also threw on a Pork Butt (Jamaican Jerk) and a traditional seasoned Pork Shoulder. The pork is probably going to be tamales or for a party on Friday.

Needed some bacon, so I oven baked 2# of bacon, which I store in my frig & reheat as needed . . .

And I roasted the 2nd of 2 tri-tips that I recently purchased to make room in the freezer. It was 3# & came out a perfect medium rare. :)

Interestingly, while looking for some liquid smoke, I "found" this bottle of Pickapeppa Pepper Sauce in the spice cabinet. I probably got it from my parents' spice cabinet over 30 years ago and it's proof that I never throw anything away. LOL! ;)

The label says it was made by The Pickapeppa Co Ltd. of Shooters Hill, Jamaica, West Indies (WI). The company is still in business & they still make it.

Don't know how old this bottle is. Saved it from my parents' place when they sold the bldg they lived in about 30 years ago. So, I'm guessing it's about 50 years old but it still tastes good" to me; kind of a spicy Lea & Perrins. There's about a 1/3rd of a bottle left and I'm going to use it on some of the tri-tip.

Going to oven roast the 5# beef rib plate (that I also purchased recently) tomorrow to likewise make some more room in the freezer. Pics of that to follow.
 
You're good thats way before expiration dates 🤞

I pay no attention to "expiration dates" which are actually "best used by" (not "do not eat after") dates. I use common sense and I've never gotten sick on anything I've eaten with such dates on them yet despite eating them years past such dates.

BTW, 3 of the main ingredients in the pepper sauce are vinegar, salt & sugar, which pretty much makes it spoil proof pickling liquid. 🤷‍♂️

I would consider this sauce, "aged".....

Tabasco made a fortune off of this! Think what your sauce was worth! 🙂

My go to is about 2lbs of fresh gulf shrimp, 1/4 stuck of butter, and half bottle of Pickapeppa sauce in a Corningware dish in the oven at 400 stirring every couple minutes until the shrimp are done. Couple that with a fresh French bread and lemon wedge, well I’ve just talked myself into it this weekend.

That’s about the most simple recipe I’ve read that got my mouth watering.

It's just two of us this year.

This is how it's going down. Spiral ham on the grill. Since the ham is already cooked. All it needs is warmed up.

The ham is getting hooked up. Glaze. Sitting in a bath of Coca cola. Pecan wood for smoke.

It'll take a hour to heat the center of the ham with a small fire. Medium low type deal. I've never been much of a ham eater. But smoked on the grill, it's amazing.
