What's that you're eating?

Finishing up the smoked pulled pork with my first try at a Cruchwrap Supreme. It was awesome.

*Even the first one on the lower right that we put way too many ingredients in.

So the woman bought a meal in a package. Roast beef. Raw carrots, potatoes, an onion.

I didn't want to babysit a roast in a slow cooker all day.

So I pulled out my pressure cooker. It'll cook the roast within an hour. I'll cook the roast for 30mins. Cool the pot and check it. Then the veggies. Pressure cooked until the potatoes are soft. By that time, the roast will be cooked.


Slight texture difference between slow cooking and pressure cooking. But pressure cooking is crazy fast with same the soft meat result.
 
I've gotten in the habit of buying a ~3lb pork shoulder every couple of weeks and roasting it for general use (carnitas, sandwiches, with yellow rice and chimichuri, add to pho or Ramen, stir fry, etc). Lightly season with homemade Cajun spice mix, brown in pan with veg, then roast until tender.

I add lots of liquid because I like extra jus. This time I diced up the fat chunks and rendered them down.

Pretty good batch of "free" lard. But, the best part is the snacks made along the way.

My terrier also enjoys this process. He's a real communist when suppertime comes around.
 
Fried chicken thighs, crispy.

Whole steamed yellow potatoes.

And....she brang home a recipe. Printed it out.

'Balsamic vinegar carrots'. The sheet says carrots, olive oil, brown sugar and thyme. Basically fried carrots with those ingredients added. Cooked for another 5 minutes.

Never had such a thing before but I'll cook it up. Got to. She printed it out. She's serious about trying it. Fine by me. We have the balsamic vinegar, so why not?
 
The wife’s birthday is tomorrow but we always treat our birthdays like Catholic holidays. It’s her birthday WEEK. Went out for lunch today.

Went to one of our favorite spots on the water and got two orders of crab cakes because it’s her favorite thing ever. She had a beautiful quinoa and squash salad with grilled prawns. I had a house salad with steak. Dessert was bread pudding, and a very strange coconut parfait that tasted of ginger and cardamom with a fruit compote.
