Wind-driven snow all day today and the wife made a Tex-mex snack-dinner. I saw a half head of red cabbage and a sweet onion go into the ground beef. Cheesy beans and fried potatoes. Warm and cozy, sitting around the television now with little taco salad bowls.
My wife nailed it again tonight. Chicken breast, stuffed with feta, cream cheese, sundried tomatoes, and spinach, done up in cast iron and accompanied by rice, roasted broccoli, and a cucumber spear.
No pictures of the dinner prep or meal today. It went quick, and all I grabbed was a picture of the leftovers. Slow braised Picanha with fresh black eye peas over an organic wild brown rice. Perfect for a cold day like today, and the diners have told me this made the “death row” list for them. I guess I’ll save the recipe. Didn’t seem too special when cooking, but I will agree it made my list of recipes to cook again soon. Just need to find another appropriate cut of meat.
