Catching up again . . .

A "Meathead" (all meat) pizza with a Barebottle "Indie All The Way" IPA that I had for lunch at my favorite pizza joint last week.

I was hungry & ate/drank it all by myself quite quickly. ;)

Decided to try to make some chili, using some ground meat spaghetti sauce (that I made previously for a regular pasta dish) as a base with some chili powder, chipotle powder, canned red beans and honey, which came out pretty d*mn good, if I say so myself, which I used to make one of those weird mid-West chili over noodle dishes topped w/grated cheddar cheese that I've seen on TV.

Added a couple of left over hot dogs to the mix which I thought was in keeping w/the spirit dish but I don't think I'll be making this dish again. LOL! ;)

Still have a lot left over that I can just use for a side bowl of chili or to use as a filling for the tacos that I plan to make in a few days.

And lastly, a Pastrami Sandwich with an Altamont "More Clear, More Beer" IPA that I just had today at my favorite local sports bar.

Had a couple lobster tails I broiled while the hot stone was heating up for the steak.

I normally slice this cut up into thin pieces for the hot stone, but decided to do this one whole tonight. It was excellent, and I prefer it to the thinly sliced pieces. Great flavor and tenderness.

And now, time to relax.

I'm gonna take two Quart canning jars. 4 scoops coffee each and water. Let them sit in the fridge.

After one jar is 24 hours old. I'm going to pour it through the filter on the coffee machine. Turn it on so the pot heats up. Add water if needed.


Let's try some cold brew coffee.

Change of plans. Were ordering pizza. The chicken gets another day in the brine.

And the cold brew coffee is off and running.

It never occurred to me to make Cold Brew in that way. very interesting.

First time. I was watching an America's Test Kitchen video and they were shilling a cold brew funnel with a plastic bottle. "Our test show this is the best cold brew Chingalo".

Then reading the comments and their toy was shot down like a like lead pigeon. As folks described using a mason jar.

We use 4 scoops to make a pot of coffee. So I put 4 scoops per jar.

It is going to sit until sunday. Check it out after sitting overnight. Black as the devils heart,


 
The wife asks for cold-brew about once-a-year, but never allows it to sit in the fridge long enough. She gets impatient. I just use one of those Starbucks french-press carafes but it seems kind of gimmicky if I’m honest.

Lately she’s been experimenting with caffe latte, but she’s using like ten-year-old Starbucks Via packs. Sitting here in front of the fire now with a properly foamed fake latte with brown sugar and orange extract. It’s tasty. Too lazy to take pics.
