What's that you're eating?

Still in a food coma from yesterday, but these were a big hit.

The wife made slow-cooked pork chops with Brussels sprouts and cornbread this evening.

She brined the sprouts for two days, then baked them with chopped bacon and balsamic glaze. Pork chops were slow-cooked in cream of mushroom, wine and cream, sage and rosemary. Cut-it-with-a-fork tender.
 
I was left to my own devices this evening so I took a peek at what I had available and then opted to do a fancier version of one of the few dishes I liked growing up that my dad called "haystacks". It usually consisted of a bed of chips (or rice), smothered in chili, and then topped with cheese.

I didn't have any chili so I opted to use those pinto beans that come in a chili sauce. Topped that with cheese, lettuce, tomato, avocado, green onion, bitchin' sauce, sour cream, and salsa. I would have liked the beans to be spicier but overall, it turned out pretty good.

Tonight is grill night. I have two chicken thighs in brine as well as the brown potatoes. I put in a brine last night.

Since I stuck the potatoes in whole and since they're brown. Best for baking. Grilling them should be the best way to cook them.

And if the brine on the potatoes work. I'm going to need buy some more salt and sugar because I'm going through what I have pretty quick.
 
Used to work for a manufacturer of commercial stone hearth cooking equipment. Customers would send their people for training in our test kitchen, and they’d often do suckling pig in the ovens and charbroilers. Absolutely beautiful. I didn’t work in the kitchen but we shop guys ate well at least once a week.

I was a huge sucker for their cubed pork belly, served with little cornbread/polenta pancakes. I think they had a name for those but I’ve forgotten.

Leftover pork chop and eggs for breakfast this morning. Was lazy and just microwaved it.
 
I'm going to make the whole neighborhood hungry. The wind is perfect for carrying the grill smoke. I've walked the dogs before, while it's cooking and the delicious smoke reaches a half mile down the road.

The majority of the street are renters and when they move out. They leave a Hank Hill gas grill by the curb. Nice ones too. Nice enough the junk man sells it for scrap.
 
Catching up again . . .

1 of 3 bottles of Eagle Rare 10 that I bought last week (on top of the 12 bottles of Eagle Rare 10 that I bought a couple weeks before) at a hole-in-the wall liquor store in El Cerrito, CA that surprisingly had such large stash of this very hard to find bourbon for just $50/bottle together w/the CRKT Shizuka noh Ken (the smaller knife) that I purchased around the same time paired with the larger CRKT Otanashi noh Ken that I've owned for some time.

Bacon, Lettuce, Avocado & Tomato sandwich w/Onion Rings & a Dark Brown Ale at "Al the Wops" in Locke, CA where I drove to on Super Bowl day before the demise of the Niners. The best thing that happened to me that day. ;)

2 empty pint containers of Ben & Jerry's ice cream that I bought & ate on sale for only $2.97/pint -- over 50% off retail. I don't normally buy/eat ice cream but this deal was too good to pass up.

Stopped at Lockeford Meat Co. in Lockeford, CA today on the way to pick up a case of wine up the road in Clements. Was able to walk into the shop w/only ` 1 person ahead of me, which is a rarity, and came out w/this haul --

2 Smoked Ham Hocks, 6 Hot Italian Sausages, 6 Mild Italian Sausages, 6 Maple Sausages & 12 Hot/Spicy Beef Sticks. Cost me $100.

6 bottles of Zin & 6 bottles of Petite Syrah made by Mikami Vineyards in Lodi, CA that I picked up in Clements just north of Lockeford. Mikami wins awards every year in its class. Good stuff at just $40/bottle.

Got home just in time to avoid the rain headed into the SF Bay Area later today & tonight. :)

PS: You can also see the small remainder of about 4qts of air popped popcorn that I made on Super Bowl day (in the background of the 1st & 4th pics above) that I'm eating for a snack before dinner now
