What's that you're eating?

Went out to dinner the other night and I got baked stuffed shrimp. There was a ton of the seafood stuffing, so I ate the shrimp and about half the stuffing. So we brought the rest home along with the wife’s leftovers.

So tonight we decided to try doing stuffed cod roll-ups using the leftover stuffing. Came out really good.



 
Grilled some chicken and bacon for dinner last night to go with our leftover takeout starches from the night before. 1/2 lb of Hempler’s pepper bacon, brushed with balsamic glaze near the end. Really tastes like candy.
Grilled pink Argentine shrimp for dinner tonight with caprese salad and rosemary toast. Finishing the last of the leftover banana bread with strawberry compote and coffee.

I never used to do much baking but I’ve been doing more this year, and getting comfortable with additions and substitutions. This one came out real nice today. We finished a pot of coffee and two slices between us this evening.
We’ve mostly been snacking this week. Tacos with ground beef and chips and guacamole for dinner last night. Grilled cheese sandwiches made with leftover caprese salad and deli Turkey for dinner tonight.


Used this recipe, but swapped half brown sugar into the cake, and Greek yogurt and whole milk instead of buttermilk. Added bourbon to the buttercream frosting.
