Found in the "wilds" of my local discount supermarket . . . 8# of salmon for just $3.99#!!!! o_O

Still have about 8# of salmon that I previously bought "on sale" for $6-7/# including another whole fillet in my freezer but I just couldn't resist. 🤷‍♂️

Now I gotta figure out what to do with them. I think I'll make oven baked salmon "candy" out of the belly strips and will make gravlax outta of 1 of them but then I'll probably just section/freeze the other 1 into 6 oz servings.

Gonna have a lot of salmon on hand for awhile. Just hope my freezer doesn't give up the ghost before I eat it all up. LOL! :)

Thank you! I was terrified of overcooking it! Super pleased with how it came out though! I’ve never really shopped wagyu before so I have no idea what type this was other than “American”. Discounted bits of some kind. It didn’t quite have the superfine, spectacular marbling that I’ve seen some of ya’ll cooking, but it sure was tasty! The wife had tinned sardines with her caprese salad. The drink is black tea with various fruit juices and four roses bourbon. 😋
 
Made some oven baked Salmon Candy last night with a 2# fillet that I had in my freezer . . .

Easy to make but time consuming because you have to wait 3 hrs of the salmon pieces to cure in kosher salt & brown sugar & then apply the honey glaze by flipping the pieces @ 30 mins for 2-3 hours while they're in the oven.

The result are very sweet & salty and somewhat dry salmon bits that would be great to nosh on w/some beer, chips & guacamole dip.

Not that I'm doing that post-diet anymore. ;)

Now I've gotta figure out what to do w/the 2 4# fillets still sitting in my frig. 🤷‍♂️

Drove my F250 (which needed to be driven) for my 1st post-diet outing after 3 months to my favorite dive bar in the "valley"for a 1/2 dozen grilled oysters, a pint of IPA & a large green salad (not pictured), which is what I always order when I go there.

Actually, I always ordered 2 beers pre-diet but I'm trying to cut back. ;)
