Amateur tip: when a recipe says to cover the dough when baking, a loose piece of foil over the top is not good enough. You need a lid of some sort to cover the whole thing and leave room to rise.

Makes sense......I've seen that with jalapenos....not sure why I didn't consider that it would be the same with habaneros!!!They start out green, then turn orange, and then red. These are from my garden and are between orange and red.View attachment 2702638
No they usually get hotter with age. If you eat them when they are green they are barely hot. They also seem to get hotter in hotter weather and if you only give them a minimal amount of water.
