ETA: wanted to make meatloaf this weekend, but my Son wanted tacos! 😆😒
1 large onion diced
10 oz shiitakes diced
1 red pepper diced
Unsalted butter
Chili crisp divided into oil and crispy bits
Fish sauce or soy sauce

Sautee vegetables in butter and chili crisp oil until caramelized, then add fish/soy sauce and use it to scrape the bottom of the pan and then let cool.

While the vegetables are sauteeing combine these ingredients in a large bowl:

1 lb ground beef
1 lb ground turkey
1.5 cups seasoned breadcrumbs
1.5 eggs
Fish sauce or soy sauce
Crispy bits from chili crisp
Black garlic ketchup or hoisin sauce

Once vegetables are warm but not hot, add them to the meat mixture and mix gently but thoroughly. Put a layer of meat down in an oval shape on a rimmed baking pan.

Cut smoked cheddar or whatever cheese you prefer into three long pieces and lay two of them on top of the meat. Cover completely with meat. Put another piece of cheese on top and cover with meat. Press into a loaf shape.

For the glaze, mix equal parts thai sweet chili sauce with the black garlic ketchup or hoisin. Pour over the top of the loaf and bake at 350 F for 1 hour.
