Since you live in a rural area and do mail order... this outfit in northern Michigan (Rogers City) does an excellent smoked pork loin. :thumbsup:

About 1.5# bacon.

Start with bacon then add vegetables once bacon is ready.

Add 3# ground beef.

Then add corn, peas, tomatoes, seasoning, potatoes, etc. until it tastes right. Let it sit while waiting for brisket to finish on the smoker.

Add 5+ pounds of smoked brisket.

Make sourdough to serve with it.

Separated the point and the flat. The flat finished in about 10 hours. The point should be done in a few hours. I'm going to put the point in the oven at 170 for a few hours and then in a cooler for tomorrow's lunch.

But I did sample some of the flat already. I will say that the difference between Prime and Choice is not subtle. Even the flat was extremely juicy.

Ellis Wyatt Ellis Wyatt that looks like a masterpiece of a meal! Add good red wine and I will do the dishes.
Opened a magnum of CDP to drink with it, but it disappeared fast!

Time to start prepping for the real meal. Some coffee and breakfast while getting the turkey and longer cooking items going.

Black eye peas are done soaking and are slow cooking now.

2nd brisket is up to about 185* after being on the smoker all night. Couple more hours and I’ll pull it to rest. Still to prep the green bean casserole and mashed potatoes, but plenty of time for that later.
