Just roasted a 8# Pork Shoulder that's been sitting in my freezer for awhile:

I don't like shredded pork so I debone & slice the pork shoulder for service instead:

Roast pork 2 ways . . .

An open faced sandwich - a slice of toasted white bread topped w/a slice of roast pork topped w/gravy & a slice jellied cranberry sauce:

I don't normally serve roast pork with cranberry sauce but I had some left over from roasting turkey & decided to try it & it is very good with roast pork too!! 😋

Just a little heads up;
My mom got the recipe from my aunt in England, for a pineapple sauce for roast pork. All I have to say, is O…M…G…

Not too difficult to make, either. You simply use the drippings from roasting the pork shoulder/hank, then add canned pineapple in heavy syrup and simmer it for a couple hours until the pineapple chunks soften and break up. Add a little salt. A pinch of black pepper, to taste, and that’s it. Everyone who’s ever tried it, can’t get enough, and always asks for the recipe.
 
Some Chinese take out that I bought & ate for lunch yesterday . . . an order of Shredded Pig Ears & Beef Chow Fun:

For some reason, I can't stand the texture of Pig's Ear or Feet. And I'm the kind of person that likes the tendon in Chuck blade steak, gizzards and almost everything else.

I like most Asian foods, actually almost anything.

First time I ever had pigs ear was on the outside sign I saw each day, at a fast food place, in the city I was working at, simply listed as Pigs Ear on a Bun with Greens.

The Collards were fantastic, the ears though…. reminds of the freeze dried ones we give to our dogs as treats 😂
