More even sear in the cast iron anyway. Great call!I wet aged some nice Ribeyes from Costco for 10 days. Was just about to light the grill when it started raining. It was still raining after 30 minutes, so I gave up and had to cook them in the skillet.Good call, it’s still raining over 2 hours later.
Butter is important when doing it this way. I added some baby bellas near the end. Cooked to a perfect medium rare.
