Went on a goose hunt a few weeks ago and ended up with an obscene amount of goose. First up with a Cheddar Jalapeno Maple smoked sausage. Ground up goose brined for 3 days in brown sugar and salt. Mixed with beef short rib fat and pork fat. It came out awesome.

I think they are bullshitting you with the "cooking Michigan products from scratch", Yoko. I don't think there are a lot of lobster, shrimp and Pacific salmon caught in Michigan. I'll give it to them on the walleye though, no bullshitting there!
