My wife made Scotch eggs from scratch for the first time and she nailed it!

Smoked a pork belly for dinner and saving the rest for Banh Xeo (Happy Pancakes) tomorrow.

Got a really nice smoke ring. Rub was brown sugar, garlic powder, onion powder, paprika, cumin, salt and pepper. Tune in tomorrow for part 2...

Suncrest (Yellow) Peaches are ready for picking very early. Suncrests are a less common peach varietal that are known for being very juicy.

Tried to exercise restraint because it is so easy to over pick but I still ended up w/a 14.5# bag. Other people were hauling away boxes of the stuff.

Just have a few days before I've got to can and/or freeze them because I can't possiblly eat them all before they fully ripen.

The better known Elbertas are due to be picked at the end of July but, given the way this season as gone, they'll probably be early as well.

Spent about 6 hrs last night canning 6 pints of peach jam with 8# of peaches, 6 cups of sugar and 4 tbsp of lemon juice. Plain and simple. :)

The "jam" is too loose. Didn't use pectin and didn't have enough time to cook down the jam any futher last night. Will just have to cook down the jam some more after opening until it reaches the "proper" consistency. No big deal.

Just put some on an English muffin. A little runny but it tasted fine. :)

Still have 4# of still unripe peaches in the bowl just for eating. :)

I'm not much of a baker, which is why I like "no bake" dessert receipes so much but I think I'm going to try to make a peach cobbler ( because it's easier than making a pie) using a NYT recipe.

I have all of the necessary ingredients on hand. Just need the resolve to make it happen. Will report back if those results are successful. Probably not, if they're not. ;)
