Not nearly as glamorous as some of you fine folks cook. But I'll be damned if they aren't addictive. My little spin on classic beignet. Cook in peanut oil. Use heavy whipping cream instead of water and a splash of vanilla.

Since I started to eat healthier about 2 years ago, I don't cook these nearly as often, but sometimes you need to indulge.

And a crawfish boil later today!!!

I go outside for 15 minutes and come back in to find someone was able to reach my beignets....

No denying it was her.

Picked up some Chinese BBQ on the way home from a wine tasting event yesterday. It's 2# of BBQ Pork & a 3.5# Roast Duck.

Have already eaten some of the BBQ Pork but still need to cut up & vacuum pack/freeze the rest. Also planning to eat some of the duck after cutting it up & then vacuum packing & freezing the rest. Both freeze well . I don't find it necessary but if you like, you can re-crisp the duck skin in the oven after gently reheating the duck in the microwave.

I usually just add BBQ Pork or duck to ramen w/available veggies for a quick late night meal.

There's a BBQ Pork/Shitaki Mushroom stir fry dish that I sometimes make & serve with steamed white rice for a regular dinner meal. I can also prep the duck for dinner by heating it up in the micro & serve it (topped with its juices &/or hoisin sauce for condiments) with steamed white rice plus a side dish of stir fried bok choy & shitaki mushrooms.

But, of course, I've also just grabbed & snacked on pieces of BBQ Pork & Duck w/o any reheating or prep whatsoever on more than 1 occasion. LOL! ;)
