  • Today marks the 24th anniversary of 9/11. I pray that this nation does not forget the loss of lives from this horrible event. Yesterday conservative commentator Charlie Kirk was murdered, and I worry about what is to come. Please love one another and your family in these trying times - Spark

What's that you're eating?

Meatloaf bowl.

Again, not a great pic but you're looking at a pot of plain congee (jook) with just some sliced green onions and a dash of seasame seed oil in it plus some store bought Chinese fried bread (jow til) heated up in the oven that I had for lunch today.

A lot behind making the congee, which is the result of boiling down the bones/meat scrapes from a 18# turkey that I broke down and simmered for about 8 hrs to make about 2 gallons of turkey broth and that I then used to make about 1 gallon of congee with 3 cups of cooked rice too.

Still have close to a gallon of turkey broth and a gallon of congee left to eat. Have used the turkey broth to make some egg drop/spinach soup. Bought a couple #'s of winter melon that I also plan to make a soup with the broth too.

I also picked all of the meat off the bones from the turkey to make a turkey sandwich spread -- a whole quart's worth and I still have another 2-3#s of turkey meat scraps leftover that I can add to the congee but there's so much leftover meat that I'll probably have to feeze most of it.

This doesn't include the 2 breasts, 2 legs and 2 wings that I already froze separately. An 18# turkey goes a LONG way. LOL! ;)
