Lorien Lorien , sounds delightful. You've inspired me to procure some duck fat in the near future.
I just buy a frozen duck and roast it. Plenty of fat which keeps for weeks, plus I make a nice broth for soup and other things. Duck is better than chicken, imo- nothing beats that crispy skin!
 
when I was a kid living on a farm, we had all kinds of duck and geese, chickens of course. Never really appreciated them like I do now, but I appreciate them now more because I didn't then
geese are scary- not only will they happily beak at your nuts, their wings are strong enough to break your face
 
Oh man I use to love going hunting for geese. My Dad and I would go off the shoreline. Set up the blind , had the small flat bottom boat. Use to keep our yellow lab wrapped up in wool military blankets and a bed of hay. Then wait and wow they drop down from the sky and would make a splash !!!! I always thought they had a good taste to them. Really hated cleaning them though lol.
