Many thanks! The Fontenille-Pataud lockback Laguiole as it's smaller and its Sanvik steel is very realistic to use with food.

Brett Fontenille-Pataud offer a huge range of knives, handle choices and 3 or 4 steels including Damascus if you want to spend a lot you can more or less choose your knife and the wait time is very reasonable, couple of weeks.

That one is a Laguiole XS 9cm in White Bone and polished finish, you can have matte if you prefer. It's also a lockback which I find handy.
