^The point you made about the thickness of the knives was my next question. Is there a chart or guide to factor the error or angle difference achieved by the different knife widths.

Also, I'm still left wondering a little by your post. Are you saying that you can set the angle lower than the 15 degree detent, and if so, how far? You could use the scale on the outside edge of the sliding clamp to guestimate. Also, if you do go say a couple of degrees under 15, will there be an issue with the stones hitting the blade clamp or the set screw in the clamp?

I'm not too concerned with being able to recreate this angle, as it's just for the initial edge reprofile.
 
Depends on how wide your blade is. Wider chef's knives can go a good bit lower than 30 degrees, yet narrower blades won't be able to go too much less than 30. I have found that I need to routinely check the tightness of the thumb screws as they tend to loosen up with use. It can cause you to change your angle without knowing it. I imagine this will be even more of an issue if you try to use the WE at a setting that isn't marked, as the marked spots have an indention in the side so the screw sets in it to help hold it in place. Also, going less than the 15 degree mark will make it hard to get consistent results each time unless you mark the area.


Mike makes excellent points here. A blade .63 inches or wider and clamped in the upper section of the vise can be sharpened at less than 15 degrees by moving the collars closer to the vise even though there are no detente dimples there to help hold the screw in place. With my ESEE-6 I can squeeze 13 and a hair degrees from the rig. With my prize chef's knife I can get 12.5 degrees. As Mike points out, it is a good idea to check that the stop screws that hold the collars in place don't come loose as you sharpen. Even when set in one of the detente dimples those screws can loosen thus allowing the collars to move away from the desired setting .
The new device which is in the works will improve this considerably if I am not mistaken. ;-)

I just order my WE back on March 3rd! I was told by their customer service that it would be shipping out till LATE APRIL! :grumpy:

Now I am really considering on canceling my order...
I have no desire to wait for something 2 months on back-order...

I think I will buy from some other seller that sells the machine entirely.

In fact, if I remember correctly, as of last year of 2010, I wanted to get the WE back in August and they still were on back-order! When are they ever going to have these things 'always' in stock. :grumpy:

I know, I was frustrated too. Frustrated in a good way, I was just anxious to get it and use it. I am very very glad I waited. You will have it for many many years to come. It is worth the wait.
I do believe there are retailers and some even offer a cutting board base etc.
I got mine from the company.
Either way, I believe you will see why people like the WEPS when you get it.
I believe in small business and entrepreneurship I know Clay tries to keep it "Made in the U.S.A." as much as possible. Demand is High.
Patience is on my Bucket List.;)

I could be mistaken but I believe the way it works is, the various parts are subcontracted for manufacture then the various completed parts to the system aggregate back to HQ for Quality Control inspection and assembly into each customized order and sent out.
It sort of has to start this way until such time that a start-up can centralize some of the moving parts involved in product delivery.
Best to keep it close to this process these days to control fixed costs in an expenditure variable environment.
 
I'm waiting too whitefox. But I think the wait is worth it on something like this.

CallsThunder - thanks for your patience. We're about to start shipping in the next few days. We put some new QC procedures in place recently and the crew has been practicing them so they should be up to speed when we do our final inspections and start boxing them up. Please remember when you get your sharpener that you can call or email anytime with questions about technique or specific knives. Rubiconns is right about our current contract/assembly situation. We're in an awkward place with being small but growing fairly quickly and some of our manufacturing partners are struggling to adapt to the growth. It's also been really challenging for me to anticipate demand (I'm not complaining here, I promise.) With a little luck, we should be seeing the light at the end of the tunnel soon with our inventory levels.

Goes to show ONE of the reasons why you can't go wrong with the WEPS. The support is amazing. Great product backed up by after the sale service second to none.

No problem Clay. I really prefer buying equipment like this from small business owners that put their heart into their work. I understand the delays and look forward to the sharpener.

I just in the last day or two placed another order with Clay (darn him with his balsa strops and new stropping compounds) and I also ordered something I had missed on my original order, the finest of his diamond hones...

which are on back order. I know this when ordering, so I will now patiently wait the couple of weeks for him to receive them, check them, and ship them to me.

In my opinion, Clay has an excellent product and if I have to wait a bit, that's okay as long as I know ahead of time... and I did.

My only problem with my WEPS is my life doesn't allow me to spend enough time with it.
