Junkyard Bone--cause that's where it was headed.

Abattoir bone--cause it was headed for the slaughterhouse but abattoir sounds better.

Snaggle Bone--named after Snaggle-tooth Lion, a favorite 50s cartoon character with dragged you teeth.

Hambone--'cause it sounds cool and it's the bone tossed to a canine friend to be chewed.

EDIT TO ADD:

I've been underground to the Paris Catacombs a couple of time. The rough, irregular shape of your handles really resembles the piles of bone tossed behind the regularly-organized bone walls.

I'm a long time lurker. However, an opportunity to contribute to the naming of your knife is too good to pass.
Here goes,

Glazed bone because of how nicely the edges are worn and burnished.

Driftbone because the naturally worn edges reminds me of driftwood, where the wood is shaped by the sea, tides and time.

Witherbone because of how weathered and seasoned it looks.
 
Because such bone are truly wabi-sabi in every sense, but especially natural beauty in imperfection.

The Japanese wabi and sabi need not be link and are of use separately.

Wabi - harmony and humbly in tune with nature.

Sabi - unconventional beauty which all things will become sooner or later.
