What would it be? For me, I'd select my Gayle Bradley. How about you guys?

I get by all the time carrying the same knives for years at a time. While I normally carry 2 I defiantly don't feel naked with just one. victorinox pioneer, assuming I have access to other cutlery in the kitchen and while dining.

Spyderco Superleaf. The FFG and acute point make it good for smaller tasks, while the lock, 4mm blade and G10 over stainless liners makes it plenty tough enough for hard use.

I've had a Victorinox Cadet on me in one way or another for the past 2 years straight .I usually mix it up with the other knife lately it's been the Spyderco Sage 1 it just works and mine is kind of a beater so it makes it even more pleasing to carry .

I like to rotate them, but the most pocket time goes to my Spyderco Military, S30V, black G-10. I also carry a Victorinox Farmer every day. I don't know what just one knife would mean.
