A local guy offered to sell me these knives....

Surgical steel is exactly garbage... Scalpels gets used once and thrown away...
Do you really want a knife made out of something that won't take a new edge?

Surgical steel is pretty much one of three kinds of steel. 316 is used for stuff like implants, jewelry (piercings, ear rings) and food prep, 440 and 420 is used for cutting instruments. 316 won't be good at all for a knife, the other two can be very good depending on how its made (proper heat treat etc).

I see your point and agree with it. I really wasn't trying to embarrass you, and i apologize if i offended you.

Your comment just made me laugh out loud, literally. As a guy who doesn't laugh very often i saw it as a gift worthy of note.

There is truth in your comment- i think that OP would benefit greatly by browsing the sight, especially the threads regarding steels and metallurgy, and the ones about knock-offs, fakes, counterfeits and the like.

"Surgical steel" is a nifty-sounding catch-all title used, and *possibly* misunderstood, regularly by both native and non-native English speakers who are not well-versed in the subtleties of the English language as it pertains to the world of modern knifemaking steels and their various traits in regards to hardness, holding an edge, sharpening, endurance/response in various scenarios and the applicability to each mixture to a given type of knife for a given intended usage.

Or something like that ;-)

I like them knives according photographs, "Surgical steel is code for garbage " I wouldn't be too sure of this, as genuine surgical steel is definitely not anything close to garbage.... Hospitals and surgeons doesn't use garbage steel, when these blades are cutting human body in order to save it's life....

Pictures however can not do good justice to us,you have access to blades,why not try them before the purchase...

No quick judgment is worth any judgment...if he is genuine guy, he will let you use at least one of them on wood....try re-sharpening, maybe it is worth it.Knives are looking good, but that's not something anyone can say based on pictures what the knife is made of....

Maybe it is garbage,but maybe they will last forever in your service and you may never regret the purchase.

You are so absolutely wrong here it is amazing. Surgeons use their scalpel once. No need for any edge holding ability. They just get a new scalpel. A knife you will use your entire life and hope to pass down should be made of a known steel. Your lack of knowledge in blades is displayed of your favorite brand choice. Rev summed it up perfect. The op gets what he said. Done and done.

I just got an email back from the guy, these were listed locally on CL, and he answered that they are indeed chipaway. Too bad, they look nice.

with all due respect, I don't think surgical steel means garbage. If someone isn't a knife guy (and chances are he is just some hunter, not a knife guy right?), then they will remember surgical grade steel a hell of a lot better than some number letter combination like it often is. I don't think you can dismiss it on that alone. $80 dollars though... seems too low to be valuable and too high to be a fair price for a cheapy.

That said, I don't know jack about knives. Good luck.
