"Carl's Lounge" (Off-Topic Discussion, Traditional Knife "Tales & Vignettes")

I'm going crazy, is it sane to check the post box twice a day hoping a knife has arrived even though you know it wont be in until at least friday??? :(

Absolutely not.

(How can you limit yourself to just twice a day? :p)

Nah...

I KNOW that it will take 2 weeks I´ll get my Peanut, however after a few days I start walking back and forth my doormat.

Multiple knives. Who me?:o

Here is a unique one it is a little too big for my pockets, useless in the kitchen. Almost sharp enough to cut butter. For some reason I only have one:D

How did you temper the blade without it turning to charcoal? :D

On another note, my oldest daughter will be graduating from high school this coming Saturday. She'll hopefully be attending college in the fall in San Antonio. I still recall the day she was born 18 years ago. Getting old. :(

My son will be entering high school in the fall and my youngest will be in 5th grade. All my kids are 4 years apart so still have some years to go before the youngest is out of college.

For y'all that have newborns and toddlers, start saving now. College is insanely expensive nowadays!

Work limits me, I dread to think if I was able to check more!!!

Obsessive-compulsive knife disorder
Obsessive-compulsive knife neurosis; OCKD

Obsessive-compulsive knife disorder is an anxiety disorder in which people have unwanted and repeated thoughts, feelings, ideas, sensations (obsessions), or behaviors that make them feel driven to order and await delivery of knives (compulsions).

Often the person carries out the behaviors to get rid of the obsessive thoughts, but this only provides temporary relief. Not performing the obsessive rituals can cause great anxiety.

(Sounds to me like you better keep doing what you're doing...;))

Guys, I'm starving. Can you do me a favor? Tell me about your favorite BBQ place in the world.

For me, it was a little cinder block joint just over the Georgia line between Tallahassee, Florida and Thomasville, Georgia called JBs. GREAT pork BBQ and out-of-this-world sweet potato pie. I used to eat there when driving up to a sporting clays place near Thomasville. Good times, a VERY laid back atmosphere, and amazing grub that they cooked in a pit out back. Man, I wish JBs would deliver to my current neck of the woods!

So let's hear it. What's your favorite spot for barbecue, and what makes it so special?

BBQ is so different across the US. For me, Texas BBQ is more about beef like brisket and ribs though pork sausage is tasty, too. There are a couple really old BBQ places in a town called Lockhart, Black's and Kreuz that have outstanding BBQ. On of the tastiest I have eaten was at Cooper's BBQ in Llano, TX. The serving line starts outside where you select the cuts of meat off the pit and can have it "dipped" in a pot of juices before you take it inside to select the sides and pay. Their brisket was the best I have had. The best sausage is from Elgin, TX.

For the local BBQ that is good but not of the higher caliber of the ones mentioned, I will stop by Rudy's, Smokey Mo's, or Pok-E-Jos here in Austin.

If you find yourself in central Maryland, near the tiny town of Lisbon, there's great BBQ right there. The Citco station just east of the traffic circle has great Texas style brisket, ribs, and chcken. There's a little dinbe in area inside, and a few tables outside. A lot of their business is carry out among the local population, and this place is a well kept secret. We try to ride our Vespa's on weekend trips around that area so as to have a great lunch spot close by.

Carl.

I'm glad my wife decided that we were gonna have barbecued ribs and potato salad tonight. You guys were killing me!

There is a little shack outside of Chattanooga at the base of Signal Mountain.

Clem gets up about 3 or 4 in the mornin' and starts firing up his smoker. It is filled with hardwood. Once it gets hot enough and is producing enough smoke from the wood he soaked in water overnight on goes the pork.

Around noon (or whenever he knows the meat is ready) he opens up and folks come from miles around. I think the place is called Shufords. Once the meat is gone he closes shop. :D

I think that the best BBQ I've ever had was in Kansas City (Missouri) back in the early 80's. There was a place (I wish I could recall the name) that was just amazing.

(And the best Mexican and salsa I've ever had was in a little cantina along the railroad tracks in Lordsburg, NM. If they'd have canned and marketed their salsa they'd never have had to worry about money again. It was that good. I had just gotten off the motorcycle after riding down from Artesia, NM and the comidas and cerveza were truly heaven sent.)

When my wife was pregnant with our first, she always had cravings for beef ribs. Good thing Texas has BBQ joints just about every other block. However, sometimes these cravings came at odd hours. I had to sit oustide a BBQ joint near the house way before they opened at 10am because my wife was craving beef ribs for breakfast. The owner was empathetic and I waited by the pit in back as the fire went on and finally around 11am I got some ribs that had been the first to come out that day.
