Tyler my weekend wasn't as productive as yours but it turned out to be a delicious one. Mr. Jackson lives a couple of miles from me and raises a few hogs each year. This old man always makes sausage and cured hams. I have been buying meat from him when available for years. He is very clean and processes meat in a very sterile environment so no need to worry about the pork. He called yesterday and said he had some meat ready to sell. I bought 10 lbs of sausage and a couple of hams. His sausage is absolutely the best I've ever had. This evening my daughter and her family came over and she cooked a wonderful southern mountain boy meal. Pinto beans with onions and relish, fried okra, mashed potatoes country ham, homemade biscuits and a peach cobbler for desert. Needless to say I'm not only full but happy.

both had me salivating. I love comfort food, particular this time of year, and they both really hit the mark.

So I thought I'd return the favor and share what I cooked tonight:

My wife and I call it "cast iron chicken" because the original recipe came from a cast iron-themed cookbook. It has chicken from a local farm, a hearty dose sausage (spicy linguiça tonight, but usually andouille), potatoes, green beans, red bell peppers, and onions, all cooked in stages in a big cast iron skillet and then steamed together with a bit of chicken broth to finish things off.

It hit really hit the spot tonight and I hope the rest of you who live in the northern hemisphere have some good winter comfort food coming your way soon.
 
That looks tasty Greg, and thanks also for highlighting Randy's earlier post, which I missed :o I used to post a lot of food pics here, but have got out of the habit.
 
Are those fingerling potatoes I spy? They make any dish wonderful.
I do 99% of the cooking in my home but my wife is feeling much better and prepared one of her delectable "one pot meals" yesterday was her wonderful chicken and dumplings. Instead of cutting out individual biscuits she makes a biscuit cake in a single layer cake pan. It is not sweet simply one large biscuit. My oldest daughter lives very close to us so they come on most Sundays and eat with us. Sometimes we cook sometimes she does. Her contribution yesterday was a jar of apple butter she had picked up from the Amish booth at our local farmers market. Her daughter's 6 and 10 made short work of that biscuit cake and apple butter I must admit they had a little help from their papaw.:D

Slaughtered a local grass fed cow in early Oct., and we dry aged the prime rib for Christmas. Can't wait! What is everyone else cooking?

little Caesars $5 pizza. :D Just kidding. I guess you could call it tradition but we always have standing rib roast and crab legs. Very tasty but expensive and my wife and I always supply the beef and crab legs for about 18 people. Every year I fuss and Ann always calls me a tight wad an scrooge? The kids and grandchildren join in our fake fight and everyone has a great time. Christmas eve is even more fun everyone gathers at our house and exchange gifts and we have a big party. I guess Christmas is a two day extravaganza in our house.

Great response Randy! 18 people:eek: Yes, I could see that being expensive, but that is the spirit of the holiday, to celebrate and rejoice. Sounds like a great time. Thanks for sharing.
