Nothing beats a big pot of homemade chili on a chilly day!

Was gonna do tacos tonight, but after seeing this I got a big ole pot of chili bubbling on the stove! Perfect day for it.
 
I knew you guys were kooks but I never realized that you were cooks too.
Great looking stuff. If this thread doesn't put pounds on you then you aren't doing it right.:D
 
That chili looks good!

I love a great extra extra sharp cheddar in my chili, and also I like to put fritos chips in the chili -

This evening I had charcoal grilled lamb loin chops, couscous with yellow raisins and pine nuts, roasted baby potatoes, greek salad with feta cheese and roasted fresh beet slices, and a nice Merlot.

And we ended the meal with my homemade Key Lime Pie, made from limes I grew myself here in central illinois. ;^)

By the way, key limes put a dark patina on John's 01 steel. I cut the limes up with my JK Modified Wharncliffe.

My goodness! Love me some lamb. Just found a guy who raises and sells locally. Can't wait to try.
 
Something I just tried. Use smoked pepper and smoked sea salt in a Bloody Mary, it really sets it off!

Today Connie made Stuffed Green Pepper soup. Served up with French bread and butter. I like to dunk the bread in the soup.

That looks really good. I am a bread fanatic. I add a little smoked sea salt to mine.

Wow! That sounds so good, especially since I love stuffed green peppers! I never thought of making it a soup, however. Looks very hearty and satisfying. If Connie wants to share the recipe, I'm all eyes!! :rolleyes:

Here you go!

Stuffed Green Pepper Soup

1 lb extra lean ground beef
1 medium onion, diced (at least one cup)
2-3 tsp. dried basil
2-3 tsp. dried oregano
2 cloves garlic, crushed (can also use 2-3 tsp. minced jarred garlic)
1 (14.5 oz.) can diced tomatoes
2 cups chopped green peppers (generally two green peppers is enough)
1 (15 oz.) can tomato sauce
3-4 cups beef broth
¾ cup brown rice (not minute rice), uncooked
Pepper to taste

Brown beef with onion over medium heat and place in the crock pot.Add the remaining ingredients and cook on low for 6-8 hours
Less beef broth will give it more of a chili consistency; adding more will make it soupier.I usually add 4 cups, but generally have a bit more than 1 lb of meat.


Can also be cooked on the stove – add all ingredients to a large pot and simmer for 1 hour.
Makes about 12 cups.
 
I just made my spicy chili up last night. it's hot. like that really good hot that burns but you just can't stop eating it!


2 pounds lean ground beef
2 (15 ounce) cans kidney beans, drained and rinsed
1 (11 ounce) can whole kernel corn, drained
1 (15 ounce) can tomato sauce
1 (6 ounce) can tomato paste
2 cups water
2 jalapeno peppers
1 habanero pepper (optional)
1/2 red onion
2 large cloves garlic
3 tablespoons masa harina flour
1 tablespoon ground cayenne pepper
4 tablespoons chili powder
1 1/2 teaspoons salt
1 teaspoon ground black pepper
2 teaspoons white sugar(optional)
6-8 strips of bacon


Place the beef in a skillet over medium heat, and cook until evenly brown. Drain grease.
cook bacon till crispy (eat a piece or 2 and set the rest aside)
In a large pot, mix the beans, corn, tomato sauce, tomato paste, and water. Bring to a boil, and reduce heat to low. In a food processor, finely chop the jalapenos, habanero, onion, and garlic. Mix into the pot. Mix in the cooked beef. Stir in masa flour. Season with cayenne pepper, chili powder, salt, black pepper, and sugar. Cook 45 minutes to 1 hour, stirring occasionally
​I like to serve it with cheese and sour creme but I know that isn't everyone's thing

Now I usually don't do the sugar part but the wife enjoys it so, if she asks we put it in :)
 
Thanks for the stuffed pepper soup recipe John & Connie,I love stuffed peppers,but this looks much easier to make & better than the frozen ones I usually get.
 
That spicy chili sounds so good. It's dripping rain here, so I think I'll get the ingredients together and make a batch up. Do I top it with remaining bacon (if there's any remaining)? Thank you for sharing your recipe!
 
no problem enjoy it. I usually just crumble the bacon up and cook it with the chili. you could definitely save it and put it on top instead which is what my wife prefers :)

Sounds great. Knowing Yolbolsun like I do though, no bacon will last that long.:D
It rarely even makes it to a plate from the skillet. Set aside the rest.:eek: Yeah, that'll happen.:rolleyes:
 
some fresh duck breast seasoned with devil's bowl chili mix, perpetua cape pepper and perpetua cape salt. it was very good.
