DEK3

we live in a would where we communicate more than ever but the odd biproduct is miscommunication or ignoring communication.

I'd posit that in today's age of innumerable ways to communicate with one another instantaneously, we've pretty much forgotten how to communicate altogether. It's becoming a lost skill set.

I hate weird falling-outs. Often times, it involves murky waters and no clear lines as to the what, why, and how of it all as it goes off the rails. Sorry things didn't work out - it always sucks, whether it's weird, murky, or crystal clear as to why one parts ways.
it happens, not a big deal

You don't need paper in your foil packet with a knife blade. Perhaps a big irregular shaped object will have enough air in there that you need something to reduce oxygen but knives don't need it.

I think the foil (which heats up faster than the work inside of it) has something in the alloy (titanium perhaps?) that reacts with oxygen for you and makes the paper moot. I'll bet it used to serve a purpose, and it still may with some large parts, but Lorien shouldn't need it.

I'll get some rainbow discoloration and sometimes a bit of scale if there's any little hole or leak, but paper also leaves crap burnt onto the blade and it can poof out your package as it outgasses perhaps causing a leak. In my opinion paper falls somewhere between pointless and somewhat harmful.

I have tested Lorien's knives here. I got HRC 59.0 for the small one and 59.5 for the chopper. The HT is probably about right, there's nothing I would suggest he change.

that's awesome feedback, thank you!
not sure why it didn't occur to me that you'd test the hardness, other than I have my moments 🙃

Interesting grind! Don't think I have ever seen a double edged knife with two edges not meeting at a single point! Looks great!!
What is the design philosophy for having double edges?

the top edge is intended to be an option, the regular version will sport a false edge. The swedge creates a distal taper which terminates at a pointy tip. The unsharpened section between the point and the top edge provides some reinforcement for the tip, and a place to push from during sharpening. No reason it couldn't be sharpened as well...

the design philosophy for double edges is maximum damage, should damage be required

I cannot find the discussion where your primary design focus and usage was discussed for this dek 3 model. Could you please point me to that?

you're on your own for that research, but I can report that DEK3 fulfills one of its main intended functions to expectations;

the top edge is a TERRIBLE IDEA for those who want to use this knife for cooking- IT'S EXTREMELY DANGEROUS!!! That said, that fat bevel zero degree razor edge debarks zucchini and eggplant better than anything else I've ever used, peelers included
