Fiddlebacks and Food

This is "Santa Fe" Chicken. I can not confirm nor deny such a thing exists. This is what I order a couple times a week when Allen & I go to the local Mexican restaurant. Varga...have you heard of such?:)

Haven't had it in a couple days , so I made it tonight.

Coming from someone who grew up in a Santa Fe, never heard of such a thing, but it obviously exists because I'm looking at a picture of it right now! :D

It looks pretty tasty!

Well first that's a beautiful dish! Even though I could not detect any red molé sauce to confirm it's New Mexico-ness, I could definitely eat that! We have a chicken dish called King Ranch chicken, and it might not be attributed or connected to the king ranch at all. But pretty darn good no matter how it got named. Hey shoot me that recipe Phillip!

my version is simple

thin sliced chicken breasts
emeril's "southwest" seasoning & olive oil
Lodge cast iron griddle
diced tomatos, onions
yellow rice
black beans & garlic w/ more southwest seasoning....
melted queso

Lol mercantilism not related in anyway to New Mexico cuisine . FWIW Santa Fe means "holy faith" . I would need it, to eat that pizza!

The shank is such a mis used cut! Long and slow with any method and they come out delicious! That look awesome! I've got some antelope shanks in the freezer just waiting for they're turn.
