Ya well if I wasn't working late with a cranky 4 month old I would have toasted the bun, and done mustard chili dogs with fresh onions and shredded cheese.... but time was not my friend and I made these happen haha. I love me some sweet hot mustard and relish sometimes. Ketchup was a mistake but it was there so I grabbed it. A nice pepperoncini and sesame seed bun would have been really nice too. But I feel like I need a real Chicago dog for that, not some packaged hebrew national.

Most Chicago places use Vienna beef, red hot Chicago, or Hebrew national. The best make their own, like Superdawg. The number 1 rule in chitown is it must be a beef dog.
