I don't fry grits very often but damn is it a tasty way to do them! I have to learn how to make a thicker grit consistency specifically for frying vs the usual soft version for just eating as is! I bet if I just take a bit of water out of my cooking it'll do the trick! I love seeing people cut up and do those fried polenta or grit "sticks" on tv!

Next time I'll fancy it up a little and do nice little arranged squares.
I tried doing a large pancake but as you mentioned it was too loose to hold together.
All worked out though, and the cheese and bacon for this shrimp and grit recipe were a bonus.:)

Yeah, it's around lunchtime here, making myself hungry again.:D
