Those 2.7 does look great. I just ordered a 3.5 and now I am thinking if I would want a 2.7 too.

Indeed. That could be! Will the 20cv version also get the nice new blade finisch as the GSO 5.1?
 
I may be wrong but 20CV and 3V can not have the same heat treat standard and have the same results for both steels. There is a significantly higher chromium content in 20Cv so it would probably require a different heat treat protocol. If you meant that a 20CV 2.7 and 5.1 got the same heat treat then yes, I could see that being the case.

You are absolutely right but I mean to say the same standards, it does not mean the same process. Like similar in toughness. Of course, different steels will have different toughness level.
