What steel do you usually use?

I use two mainly. Both are excellent for my applications and who I make knives for.

AEB-L stainless run at 62-63RC.

26C3 high carbon run at 63-64RC.

They are similar in taking a razor edge, holding it well and being able to be resharpened easily. I also like how easy it is to bring both of these back to 100% with just a stropping or a few licks on something. If a guys got 200 calves to do before lunch I don't care what your knife is made of its gonna need touching up or resharpening. When I do a show I can always tell if a potential customer is a hunter or a cowboy. The hunter asks how well does it hold an edge? The cowboy asks how easy is it to resharpen?

I ask both but I tend to the latter: Too much general farm work, I guess (no calves here!). A Horsewright knife is on my wish list, for sure!

And no damage to the temper?

I'm sure some was lost but a file still skated. Quite well in fact. There is a small crack in the blade. I asked if they wanted me to reprofile it out but he wanted it left as is , mostly a memento. It sharpened and cut very well.
What model is that? El toro?

Tough question. "I'd hate to bet my life on the difference", as John Wayne said to Dean Martin, regarding Ricky Nelson's shooting skills.

I like the less stabby point and the step down from ricasso to edge on the RH. I also like the RH handle, which I've tried to copy because it feels so good in hand.

I love the Kabar's slightly longer, slightly squarer, less tapered handle, which gives good leverage and fine control, and the slight finger grooves, which tell me where my edge is without dictating my grip. The blade is a little thicker than the RH's, so would theoretically be a slightly wedgier slicer, but enough to feel?

The RH looks broader because of the higher point and the stepped edge, but if you hold them over each other they're the same breadth.

By a hair's breadth, I prefer the Kabar, because that handle is pure brilliance.
