How about just, "Y2Knives"
Lots of FREE publicity, and instant name recognition.
 
Here are three suggestions:

Durin - In Tolkein's universe, Durin was a master among master smith and king of the Dwarves of Moria. Of course, knives bearing his name would have to be of exellent "custom quality" design and precision, and should have Mithril blades and Unobtainium handles.

For those not familiar with the history of Middle Earth, the name still conveys an image of usability and durability.

Tubalcain - Another ambitious name, for the "first metalsmith" from the book of Genesis: "And Zillah, she also bare Tubalcain, an instructer of every artificer in brass and iron . . ."

i kind of like "UtiliTech"...or how about something wild like "EventHorizon" (the beginning/edge of a powerful force of nature)...another one: SharpHorizons. i like Genesis Edge or Genesis Cutlery but there's a lot of knives called Genesis already. NovaTech? NuForge or NewForge? Nova Forge ("forged in the heart of something new" wow, cool).

i wish i'd thought of SteelCat, that's a fun one!

'course, 'twere it me, it would be something like "EagleEye Knives" ("sharp as an...") or "SharpWing" or something

In the computer design field, technology that is hard/expensive to implement is called "Bleeding Edge Technology".

Hey again, I was about 5 miles into my run when I thought of this.

Patriot Knife Systems or Patriot Knives. For instance:
Hey Magilla, "Did you get another tie for Christmas this year?"
Heck no Dave, "I made out this year and got the new Patriot "Rifleman" I've been wanting."
Cool, Patriot sure makes quality knives.
I know, "I already own the "Bugler", the "Corporal" and a custom "Minuteman".
Wow Magilla, "I'm going out to get mine today"
