can't Gonna try out a carbon steel skillet, besides the stainless steel skillet I just got, to compare them against the old reliable cast iron. The black steel model I picked up is a beast of a tanker, heavy duty and thick. It's French, made by Matfer Bourgeat. I just eased over the edges with some emery, then started the seasoning. I reckon a round of bacon and eggs is in order this weekend, some kind of taters to go with ought to about do it. A pan seared steak... ohhhhhhh. :)
I can't quite get my seasoning right on my carbon steel skillet. But that might be because I primarily cook eggs in it and not much fatty stuff.

I'm totally open to suggestions.

Wait. What??? I feel like my life might have just changed in an amazing way...

Got any pics?
of course not - I ate the evidence before SWMBO could scold me for being "heart un-healthy". ;)
maybe tomorrow.

for the record, the point end works better -- it's got a thicker fat layer with more meat fibers in it, but the "crispings" from the flat end were plenty tasty.

Well, bacon is the benchmark for fatty, seasoning magic. I refer all serious cast iron and/or cooking related queries to Cowboy Kent Rollins, even though he don't know me from Monday morning.
I like starting off a weekend morning with a round of bacon, dump most of the grease out and go straight into eggs and toast, and always use a wooden spatula for to be nice to the seasoning. No soap on the cast iron ware.
Carbon steel should have much in common with cast iron, speaking from shop experience, not kitchen experience. The steel ware should prove to be far tougher, almost bullet resistant. BB resistant, I should have said.

GENERALLY:

well, restore the pan, soap, steel scrubby, scotch bright, whatevers...

get pan WARM/medium hottish and DRY

LIGHTLY coat pan with some high smoke point oil (peanut oil), wipe to get evenly smooth, and BAKE it at a high temp in the oven, it's gunna smoke some, so account for that. if you have a hot hot grill, outside, use that.

when it stops smoking... repeat. 3-4-5 whatever times. done.

never wash it with soap after :) steel scrubby for chunks, water, etc, etc; dry, don't put up wet

If you cook bacon or eggs on your BK knife, does that ruin the temper? Is that why people use pans, skillets, flattened hubcaps if your local classic car you "Found"?

best troll evah!

My wife mentioned that we haven't had a Dollar Tree picnic in a while. Rules for a Dollar tree picnic are I take my cook kit a camp stove my spice kit and a couple bottles of water from home.we set a predetermined limit on how much money we can spend at Dollar Tree usually five or $6. We take that amount find enough stuff to make a meal out of, then go to a local park and have a picnic.

Interesting challenge! What sorta meals have you managed to whip up?

Stir fry veggies with the thin beef steak they sell . Mac and cheese . I'm sure there are more but I don't remember aat the moment

knorr & lipton sides, like the broccoli & cheese work well as budget camping/hiking food.
