I have consulted my olde and veritable 5th edition of Levines-don't worry I wore my fez and used a page turner. After I had blown a thick cloud of dust and spider webs from its hallowed cover I settled down in "the study"

and discovered this interesting factoid.
"JIGGED BONE or BONE STAG(called STAG in most knife catalogues):mechanically gouged bone ,or sometimes second cut stag, that is usually dyed (often with potassium permanganate) to resemble genuine stag."
it goes on but the point of interest alludes to my earlier observation about unusual jigged stag antler.
Levine discerns between this and
"GENUINE STAG: outside cut ("bark") of deer or similar antler,"
So even though it states STAG on your box of knives they could very possibly be bone-which is different -just as nice really but different and therefore...
