The forest service puts out a publication "An axe to grind" that is a free download. It's really a fun read and has great tips (and they have a companion video that will lock you up for a while too). I strop mine with wet/dry on a sanding pad and get them all shaving. It's a blast digging through flea markets and junk shops for old axes.

With the handle, just keep it clean and use linseed oil on it?

I mix 50/50 boiled linseed oil and mineral spirits. Use it for everything. Wipe down the handles, the head and even the leather mask. Murphy drinks it.
I have both - they 10x10 works well so long as the wind is predictable -- if there is a strong chance of storm with quartering winds the 12x10 gives better coverage and you can close the ends in cold weather.
I have a user 3-mil, would be willing to trade scales if you want canvas micarta -- they're not pristine, though.
otherwise, you might consider the Knife Connection's custom G10 scales -- totally changes the feel of the knife. (in a good way)
