Are they? :confused: I can tell the rough coating on the 15 offers more resistance when cutting jalapenos. Gonna have to do a follow up to my video on coatings.

All the pictures of every one I've seen pre-strip was the smooth coating.

Your problem with the 15 is its still coated ;) you need to take some sandpaper to that and smooth it down, or just take it off.

I generally like Bourdain, although sometimes I think he's a pretentious jerk. I reckon that depends a lot on the people he's with at any given time. He's done shows in "heartland" and "ghetto" settings where he was super down-to-earth, and shows in hoity-toity trendy-ass big-city spots where it costs $300 for a highly-decorated plate of basically nothing, and he sucked up so much it made me want to puke. :confused:

Regardless, I'm torn between wanting a "celeb chef" like him to come to East TN to show-off how truly awesome the food is here... and hoping they never do, so we don't get further over-run by touristy dicks who make traffic worse, lines longer and drive prices up. On the other hand, tourists spend gobs of money and love local artisinal stuff, and I sell handmade knives made right here, so there's that. On the other other hand, we already have the coolest celebrity chef of them all in our backyard, so... *shrug*

It's quite a conundrum... ;)

The plan from the beginning was to strip them. I've only had them for a couple hours so far. Maybe this weekend.

Just kidding. I dont bother stripping my knives anymore unless/until they are all scuffed up and missing a lot of coating already... or to stonewash them.

The 15 needs it, I can tell it's causing resistance. I have a 7 from almost a year ago that isn't stripped yet but I've never used it other than testing.
 
Guyon, looking back I don't recall you ever making any of your famous biscuits at the gatherings. I think that needs rectified.

I checked my records/transcripts and it appears this is fact. No biscuits at all. That could get you shot at.

I could do drop biscuits in Ethan's oven, easy, but I honestly don't have Dutch oven biscuits down at all. I need to work on my game.

Call me a greedy sell-out whore if you want, but I'd give my left nut to see Bourdain or even Rachel Ray use one of my kitchen knives on TV. The sheer numbers involved are mind-boggling. I truly love using and making camp/combat/survival/fighting knives; that's what got me into this whole sordid mess in the first place, nearly 30 years ago.

But... I got bills to pay. And chef's knives are every bit as fun and challenging to make. :thumbup:

All those knife magazines and forums and TV/internet survival-expert-goofballs notwithstanding... relatively few people go camping/hunting/survivaling/tacticalling, or collect high-dollar knives... but everybody eats, and many of them cook...
