BTW. I worked in a printing plant for 11 years. Cut cardboard roll ends off rolls of paper for at least 8 hrs a day with an Old hickory butcher knife. Avg about 25 rolls 4 ft across? per day. Sharpened my knife on a grinder with the wire wheel. Shaving sharp to start with by the end of the day it would end up needing sharpening the next day. Used the same knife for 11 years, so I pretty much know I wasn't taking too much metal off. Free hand. Any one else use a wire wheel to sharpen their knives?

Oh, I kinda thought if I ever needed to know how to sharpen a knife that a meat cutter would be as good as any to ask..So, how do meat cutters sharpen their knives and what do they use?
 
Was he asking for my help?! I find myself not qualified compared to a lot of others here. I still want to know if the Sharpmaker used traditionally to sharpen my ASHBM cg is the way to go? And if the ceramic sticks alone would be sufficient.

He wasn't asking for your help, he was trolling. :mad:..

The sharpmaker should work just fine on your ASHBM, i tried the sharpmaker on a NMFSH and it worked perfectly , but if you are in need of a regrind the sharpmaker is not the right tool.

I will try to make or find a video with the sharpmaker explaning how to use it on big blades like the ASHBM.

Alright guys -- so I know everyone raves about the Spyderco Sharpmaker -- but my experience has been mixed. I've sharpened my Kershaw switch blade (minimal success), my Victorinox Swiss Army Knife (Very Successful), a totally dull blade (no success), a kitchen pairing knife (successful), and my Ka'Bar USMC (minimal success). I want to sharpen my Busse knives, but I feel I don't deserve to sharpen them yet since my skills have been inconsistent. I have excellent muscle control and I can keep a consistent angle and sharpening pace. I would need to actually see someone sharpen a convex edge on the Sharpmaker to properly understand -- but more importantly why am I not succeeding with such an "easy" sharpening mechanism??

I didn't see this post until just now, I will make a video for you since i cant seem to find any good ones.
 
The sharpmaker i have used is not mine so i have to wait until i get mine before making the vid but i can give you the steps

To help you out you can put some permanent marker on your blade.

Then you start sharpening where the convex begins

Move closer to the apex

Sharpen the apex and do the same steps on the other side.

Start stropping if you have a stropp

After a few passes on the stropp you have a polished scary sharp edge.

For these pics i used the same ceramic that's in the sharpmaker but i did it freehand.

Before I got my Edgepro this is how I would reprofile blades with my Sharpmaker, just watch your fingers.:cool:

Yeah those big diamond sharpeners will cut you a new profile in no time at all, it's amazing how much steel they can remove in just a few passes, good idea putting them on your sharpmaker :thumbup:.
 
the small worksharp machine (as seen in rob stanleys downunder razorback thread and video) is advetised to create a convex edge with little practice and effort - although i dont know if i would try to sharpen my expensive knives with a machine - always afraid to take off to much material

evo80: Just finer grits until you got the hang of it then you can bring out the aggressive belts. I was anxious too but a sander is good to have for those major dents & dings. Just reprofiled a couple of abused Fiskars Hatchets and the results were glorious.
 
My Uncle uses the Worksharp for his butcher knives, and he is absolutely thrilled with it!!!
From what I have seen of the edges he gets, and as quick as he says it is..I can't argue with the results..I'm a free hand man myself though:).
 
What type strop would you suggest? Smooth or rough side out. I looked at the strops you suggested and planning on buying one.

smooth side out is the most useful one and also the one you need for getting every last bit of sharpness from your blade.
