I like Insomnia, where Al Pacino used a small version of the Buck 110 to cut plastic and as a screwdriver. No weapon use here.
 
The Professional (all the little knife scenes kicked ass)

Also liked:

Pulp Fiction (the Katana Sequence during Zed rape scene... gave me goosebumps... I think 100% of knife/sword lovers would beg for such an opportunity to be forced into using a katana like that!!)
Gangs of NY (ignore the plot and sit back and enjoy knives galore)

Last of the Mohicans (go Magua!)

Windtalkers (am I the only one who thought that Native American with the knives was badass?)

Predator (anybody know the name of the blade that Billy uses?? I gotta have that one! all I know is that it's a Jack Crain)

Saving Private Ryan (the scene with the German dude pushing the knife slowly into the Jewish American dude was probably THE single most disturbing scene in any movie for me!)

Just saw it last night. Some brutal goings-on with sharp-edged weapons. They redefine the ability to carry multiple knives on your person (although, not all that hidden). Some good knife throwing scenes and more.
 
If you liked the knife & tomahawk fights in Last of the Mohicans you'll dig Gangs of New York as well. I wouldn't have thought of Daniel Day Lewis as an 'action hero' but he rocks in both these films. Now I'm in the market for a big cleaver and a butchers tool belt like Bill the Butcher's.
 
The swordfight scene between Cary Elwes & Mandy Patinkin (I'm sure even he doesn't spell it correctly) is nothing short of brilliant.

Michael Pare does a fantastic job of ridiculing a would be tough guy with some slick "balisong" (yeah, I know it's a make, not a type. but...) work. In "Streets of Fire"

& who could forget the swords & more swords in Kurasawa's Seven Samurai?


P.S. I like Blind Fury too;)
 
The Simpsons-episode where Bart gets a Swiss Army Knife and he goes camping with Homer... In wich they show that you cannot live without a knife :-)
 
I should also add some interesting knife fighting scenes from " Bourne identity" and "Stiletto dance" Would someone tell me please who made the axe from "Stiletto dance" ?!!!!. It's driving me crazy...

K. Williams, If you liked First Blood, get the Fifth Profession by the same author (I forget his name). It's just as good, if not better.

Another one for you guys ... corny show Titled 'Demon Night' in the Tales of the Crypt Series featuring Billy Zane. Great Balisong action ... both deployment of the Butterfly (from various position ... one handed), throwing the balisong (yes!!! ...guys) and slashing them Zombies.
