I wouldn't include things like the Gil Hibben "art" knives - they really are just blade shaped things and in no way meant to be a functional (cough) knife like some of the beauts posted.

Yeah, so I applied red marker to check where I sharpened the knife. Upon realizing it was permanent marker, I just colored the whole damned thing.
