I love my Becker BK-7 & Becker BK-9 - but they are each over $50, therefore beyond the scope of this thread.

The Opinels are great folders available in all sizes and in either carbon steel or stainless. They also come in under the $20-$50 range so they are much more suitable suggestions than those knives that are over.

For those that want one handed opening & locking blade on their folder it is hard to beat the RAT-1 - it is at the lower end of the $20-$50 range (around $25) and is a great folder for the price.

For a fixed blade the Mora knives are fantastic! Also under $20 for many models and are very useful knives for many tasks including food prep & woodcraft.

For a bigger knife capable of some wood chopping there are the Imacasa or Tramontina machetes. The ESEE Lite Machete with Micarta scales can also be had for under $50 without sheath - that's pretty good value IMO.

For a person with a limited budget that wants some knives - what tasks can't they handle with the above knives? My walnut handled stainless Opinel can be used as an EDC and so can the RAT-1. For camping what can't you do with a Mora and an Imacasa? The only negative would be going camping with over $1K worth of knives and being alongside a mate that is a bit short on cash that could only afford a Mora & Imacasa - then seeing how he can pretty much match any task you can do, but on a total budget of less than $50!!!!! It makes you realise that all the expensive knives you buy are because you want them, not because you need them - needs can be met much, much cheaper! For camping on a tight budget I would happily take an Imacasa Machete for chopping, a carbon steel Mora for woodcraft & a stainless steel Mora for food prep - total cost for the 3 would be under $50! How can you beat value like that!
 
Definitely Buck 110, helluva knife, can be had for a reasonable price and it's just made well.
Opinel. Why not get one. They are cheap, but not cheaply made.

another vote for the scamp and skyline from kershaw, and old hickory butcher knives. lots and lots of utility for very little dough. :) also cold steel machetes.
 
I really like my Boker Subclaw and CRKT Minimalist (Wharcliff version), they run about $25 and $18 respectively.
 
Having gone through a lot of fancy metal, I think Mora and a good SAK are the only cheap knives I would call "must have." Everything else is just for fun or politics.
