The meat from a wild turkey is excellent, however you must be choosey in how you prepare it, it is dryer without any of the injected butter solutions, etc. that are present in some store bought, domestic turkey. A wild turkey uses its legs constantly and the leg meat can be quite tough. The best wild turkey I have ever had, has been deep fried after being cut into strips and battered (turkey tenders if you will). OHWith the pictures of Wild Turkeys ( I like the Bourbons very much ) is the meat tastier than farm bred Turkeys?
