What "Traditional Knife" are ya totin' today?

I'd love to hear what someone who KNOWS a little something or other about beef has to say
How to you know when to flip them (visual or timer or smell or something) ... and how long on the other side before coming off the grill
No.2 slot on the grill looks pretty close to the coals and maybe that has something to do with it too. Thanks :)
Honestly, I have no idea what I’m doing, but I’ll give you my strategy anyway. I try to get the burgers relatively flat so they don’t swell into balls that are hard to cook through. I do that before they go on, rather than smashing them onto the grill. On a grill like that at a campground, I try to get the grate as close as I can to the coals without burning the burgers. Generally when juices start collecting on top I flip them. I’m a big fan of a high-quality instant read thermometer. For food safety reasons, ground beef should be cooked to 165 degrees. So, once they’re flipped, I temp them and when they get to 165 they come off. The best part is, we’re camping, so even if I mess them up they still taste good. 😁

Going to town in a bit. Cindy is getting her hair done and then we're headed to the Wagon Wheel Cafe, the Holiday Market and 4-Corners grocery store. Hopefully, this will be a Plain-Jane no excitement trip. Still very sore from doing chores over the weekend. Anyway, I'll be totin my Tribal Lock Lumberjack knife with me.

Glad you like those "ancient" Old Timers, John. I have quite few Old Timer models, but most of mine are Chinese. Off the top of my head, I think the only Schrade USA Old Timers I have are that 33OT, a 34OT, and a 93OT.

I'm going "off the schedule" this week, carrying a bunch of knives I ordered in May instead of the knives on my typical weekly rotation schedule.

That’s a #54 Big Jack from Tidiute Cutlery.
I don’t have very many GECs, but the folks on here kept showing them off, so I found this used on the big auction site a few years ago so I wouldn’t feel left out!
I wondered if it was a 54, but had no scale to judge by … that’s a handful o knife right there!

IMHO the 54’s are nice because they are big robust knives with a little more ‘reasonable’ pull than the 23’s (or even some of the early 73’s!) That micarta Jack is a nice one!

We spent the weekend camping at my daughter’s class camping trip. I had these two with me (and an assortment of fixed blades).

Looks like fun Bart, and maybe a little hard work. I occasionally work the grill for the sports boosters during home games. It’s fun to see folks enjoying the food but it’s hectic at times. 😉👍

Nice MIke! We don't see that knife very often. Mine lives in the pocket of my housecoat/bathrobe (get that image out of your head ;)).
