That is Uncle Sam cereal; been around since 1908. Whole wheat kernels and flaxseed. The knife is a Thiers from the maker Chambriard in Thiers, France, with a juniper handle. Hey, Jack, I posted a little review here, Your newest addition:traditionals of course!. I'd add to that, the finish is really nice. The only thing I might change is the location of the jimping on the spine. I feel it would be more effective if it was not so far forward on the blade. More like the placement on the original Nessmi (although the jimping was different also).How do you find it Gary - the knife, not the frittata, though both look good?!I noticed that the Boker Plus version is slightly different, but I've been very pleased with most of the Boker Plus knives I've had
