I did a bit of research on my Forge de Laguiole and it turns out that the scales are what F. de L. calls stamina. It's made with wood veneers "dyed, then impregnated with phenolic resin and compressed under high pressure and heat." Something like a laminated gunstock I guess. Still counts for wooden Wednesday, right?
