It is funny, I don’t think I’ve ever used a Spey blade to cut a calf. I’m not too picky, usually if we are processing I’ll just grab a couple knives for the day that seem sharp. The small clip point blade was originally intended as a scraping blade with which officers in the Swiss Army could erase their writting mistakes. That's why the old Victorinox ones have more of a belly to them. The Wengers are pointier, like the one on the yellow German knife you posted. I find it interesting because it's a different approach to the issue than with American office knives, which originally had a sort of spey, corn or grafting type of blade for this purpose although those too were later mostly replaced by pen blades.
You know I used to fancy the 85 mm Wengers having a nail file but now I just feel naked with a knife that doesn't have at least one big and one small blade ...![]()
