A custom order, Santoku Kiritsuke 180mm in 14C28N at 62 HRC. Paper Micarta handle with G10 racing stripes and a mosaic pin.

Could something like this be done in 3.5mm 75cr1? The grind would be obviously very short and convex. Will it handle bone chopping and at what hardness is the peak toughness for 75cr1?

Its hard to keep your thread and thoughts and answers together when you post questions in this part. I think you should start you own thread on your question.
 
Does it stay flush with the liners on the side or does change of humidity make that you can feel it?
 
Working on something different a forged meat cleaver first one ,its intended use will be chopping BBQ meat. Second new thing I hadn't used 5160 it seems to be working pretty good for this application. Still have some grinding to do but it's testing well.

A little EDC Cleaver I made for my oldest daughter. It's my first free hand grind. Got a little HF 1x30 and I'm encouraged by the results. Made it by cutting and regrinding an old beat up chefs knife I've had since college. Gave it some new life. Still need to finish up the handle and make a sheath.
