Half-cocked though it may be. I thought that hawkbill was one of the kitchen cut-outs. I should’ve paid more attention; recurved high hardness chisel ground AEB-L sings to me so…

Due to customer request, this will not end up being a santoku. It will be right side chisel ground with serrations and a plainedge sharpened clip though. And not a small amount of scary.

I just refined the hawkbill serrations' geometry and they zip effortlessly through cardboard now. I wish I could show you the video but I'm at the shop and my phone is too old to upload to Vimeo. Later if i remember.

Forgot to mention yesterday morning that I picked up the 15N20 blades at the post office and spend the first half of the day cleaning them up from forge scale and cutting handle materials to go with each knife on order.

Here they are with a list of who gets what.

And now this also cuts like the hawkbill. It's official guys: I've figured out serrations. I used to be "not a serrations guy". That's history.

A tiny bit more refinement is in order but this is the general idea. And look how easy my serrations will be to keep sharp with a ceramic rod and slack belt strip. So easy. My number one reason to avoid them before was difficulty in sharpening. Problem solved.

As usual on a new run, I spent some time grinding on unclaimed blanks to get a feel for the steel.

Loving it so far. These are going to cut amazingly well.

First up for 15N20 is this traditional wide drop pattern I was asked to make for someone in AK. Not sure what it's called but I think it's for processing animals.
