What's that you're eating?

You can't tell from looking at it but this is a really fragrant dish. It's Thai Khao Mun Gai that I made from an American Test Kitchen's (ATK) receipe.

Poached chicken dark meat over ginger/garlic/white onion (recipe called for shallots) flavored jasmine rice topped w/home made khao mun gai sauce (made from Thai fermented bean sauce, soy sauce, vinegar, ginger, garlic, sugar & Thai chilis) w/some cucumber slices on the side.

You're supposed to make it by poaching a whole chicken in garlic & ginger flavored water but I improvised w/some left over chicken parts & legs. Don't really like chicken breast meat all that much, so it was just as well.

The broth made w/by poaching the chicken is considered part of the ATK recipe. Had some but it's nothing special. Will save/use the broth for other dishes, like a veggie soup or jook (congee) later.

Just watched an episode for ATK's "recipe" to BBQ a flat of beef ribs in a Weber which I'm planning to do next. I've done that on my own before w/o following a specific recipe and they turned out fine but am interested to see how these will turn out. Just gotta buy the ribs. ;)

If ever you find yourself in Albuquerque, intentionally or accidentally, I highly recommend trying Dion's Pizza. Their homemade green chile ranch adds the novel taste to the experience. yoko yoko look at that string of cheese :)
You can't see it too well, but their Italian sub is pretty amazing as well. They don't have a Dion's out in Gallup so we are taking extra pizza and subs to go.

Had the urge to eat a clam & anchovie pizza, which is my favorite, but I know of only 1 place that serves it and it's no where near where I live.

So, I decided to by the fixings on Amazon and hope to make one at home soon. Going to make it in a sheet pan. Pics of the actual results to follow.
